Gilmore Girls is an iconic show set in central Connecticut circa the late 90s and early 2000s. The show centers on the lives of mother/daughter duo, Lorelei and Rory, in their town of Stars Hollow. Stars Hollow is a fictional town filled with zany characters, and the "Gilmore Girls" are no exception. However, one thing that seems realistic is their near addiction to caffeine and chocolate. 

That got me thinking. What if we took those two things to create something right up Lorelei and Rory's alley? I mean, coffee and chocolate basically go together-it's just the principle of things (sorry, I don't make the rules). 

Then it came to me. A cookie, but not just any cookie. A coffee and chocolate cookie. And why stop there? Let's make it double. 

A double chocolate-coffee chip cookie. 

It's your basic double chocolate chip cookie, but with coffee mixed in. These espresso morsels from Nestle should do the trick. 

But I wasn't going to exclusively put in espresso chips, no, no. I was also going to:

A) Mix coffee in the dough, and

B) Combine regular, semi-sweet chips in addition to the espresso chips. 

I decided to use my favorite chocolate chip cookie recipe (as seen below), and mix in 2 tbsp of cocoa powder, and 2 tbsp of hot coffee in the liquid ingredients.

*I cut down the recipe to make 16 cookies and still got ~20*

Right off the bat, after I combined my dry and liquid ingredients, I realized it was too wet. The dough resembled more of a brownie batter than cookie dough. 

(At this point, I was too stressed trying to fix this to remember taking pictures. I apologize for the lack of them.) 

I wracked my brain with what to do and finally folded in 2 tbsp of flour. While it did improve the consistency somewhat, it still reminded me too much of a thick muffin batter. It also certainly couldn't be molded in your hand. 

So, I tossed in 2 more tbsp of flour and folded that in. Finally, the consistency was where I wanted. Still, you couldn't mold it manually, but it was considerably better than it had been just a few minutes ago.

However, all that extra flour meant I might be risking a cakey cookie as an end-product. That's fine if you prefer that, but I don't, and I was really gearing to make the best combo of chewy and fluffy. 

In the end, I decided to mix in 1 tbsp of brown sugar (White sugar will make the cookie more crispy/snappy, whereas brown has that moisture to give it a good chewiness). 

After that, while the mixture was thicker, I decided to chill it in the fridge for 30 minutes. This meant the dough might get even thicker (which it did), and it also helps to bring out the flavors. 

Afterward, I folded in the semi-sweet chips and espresso chips and scooped them onto slip-pat lined cookie sheets using an OXO Medium Size Cookie Scoop

*You can make your cookies smaller or larger, depending on preference. Just know you'll get more or less cookies.* 

My oven had them done at 13 minutes, and quite honestly I was pleased with the results. Despite my doubts, they looked like cookies! They were round and had spread nicely (that 30 minutes in the fridge is mandatory), but not too much. I seriously wish I had a photo here, but I was just too excited to remember.

Guys, I can't make this up when I say the taste was phenomenal. The coffee is subtle, but you can definitely taste it fighting through. The chocolate is there, too. It doesn't overwhelm the cookie, but it is the main star (because of the cocoa powder in the dough). 

I can definitely see Lorelei and Rory sitting at their town meeting, eating a tub of these. 

I highly suggest you make these cookies! Everyone needs to have this amazingness in their life. Here is the recipe I used.
