If you haven’t heard about or seen the latest avocado toast trend, well then you’re probably living under a rock. We decided it was time the dining hall get with it. So with the help of Dining Services and its new director, Jeff Kurto, we brought in an avocado toast bar. And it was amazing.

Each piece of toast was slathered with fresh avocado, cut, mashed, and spread by yours truly. Toppings included pesto, tomatoes, arugula, hummus, feta cheese, lime, cilantro, jalapeños, and roasted red peppers. Every combination was pretty darn good (though a personal favorite was feta, arugula, cilantro and lime). It was even Spoon Editor approved!

If you missed out on this truly life changing meal, avocado toast is super simple to remake in your dorm room or kitchen with just a few ingredients. It’s perfect for breakfast, lunch, pre-dinner nibble, dinner, or a late night snack. Basically, there’s never a bad time to eat avocado toast.
