These double chocolate fudge brownies will completely cure your most chocolatey cravings and might literally change your life. The coffee grounds bring out the rich flavors of the cocoa beans in the cocoa powder, while the melted chocolate chips add a fudge-tastic center that you won't be able to resist. You might even begin to dream in brownie, which I have recently experienced to prove that this is really possible.     Ingredients

  • 1 1/2 sticks butter or 3/4 cup butter
  • 1 1/4 cup semi-sweet chocolate chips
  • 1/2 cup brewed coffee
  • 1/2 cup cocoa powder
  • 1 teaspoon coffee grounds
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup flour

    Preheat oven to 350˚

  • Step 2

    If you usually keep butter in the fridge or freezer, soften butter by microwaving for 20 seconds. Then, cut butter into smaller pieces.

    In a microwave-safe bowl (I opted for a glass bowl), combine butter and 3/4 cup of chocolate chips. Microwave for 20 seconds, stir. Microwave for another 20 seconds and stir again. Repeat until butter and chocolate chips combine into a consistent liquid batter. While batter is still warm, add in 1/2 cup brewed coffee and 1/2 cup cocoa powder.

    Add coffee grounds and mix well. The batter will start becoming a rough texture with a lighter, more whipped consistency. When the cocoa powder and melted chocolate combine, you'll begin to smell the rich interplay of the two ingredients. Tbh, it smells almost as if you are sipping a hot mocha at a high-end European coffee shop while aimlessly people watching. You're welcome.

    Once combined, add in brown sugar and granulated sugar. Mix in eggs, one at a time, stirring well after each addition. This will smooth out the mixture into a more consistent batter.

    Next, add vanilla extract, salt, and flour. Once combined, mix in the remaining 1/2 cup of chocolate chips and stir well. I usually throw in a few extra chocolate chips because why not?! Cover the bowl with plastic wrap and refrigerate batter for 15-20 minutes. I know the wait is almost impossible to bear, but, trust me, this step is key to ensuring your brownies have an extra fudgy texture.

    Cover a 13x9 baking pan with parchment paper. Once the batter has cooled, pour into pan and sprinkle a pinch of salt over the top.

    Bake for 25-35 minutes. For the ultimate fudge brownie, bake until a toothpick comes out with only a bit of fudge rather than covered in batter. Once ready, take pan out of oven and let sit to cool for 10-15 min.
