This Tuesday SpoonU took over the exhibition in Upper to serve up some tasty, refreshing smoothie bowls. With the help of the lovely Union Dining Services, we created two bases that could be piled high with toppings.

Base 1: Berry – strawberries, blueberries, mango, acai juice and yogurt

Base 2: Green Power – kale, kiwi, green apple, bananas, coconut water and yogurt.

Toppings: blueberries, raspberries, pomegranate seeds, granola, craisins, raisins, flax seed, pumpkin seeds, white and dark chocolate chips, dried papaya and toasted coconut (A personal favorite was raspberries, pomegranate seeds, chocolate chips, and toasted coconut).

People were definitely skeptical of the green smoothie, but once we finished the smoothie takeover, we successfully had some serious green smoothie converts. Job well done.

If you could not make it to the event, smoothie bowls are super simple to make with just some frozen fruit, a blender, and toppings of your choosing. Here are some recipes if you need some inspiration. We will be doing a SpoonU Upper or West takeover every other week.
