If you’re a little bit like me, you probably get bored with eating the same breakfast items over and over again – and if you’re a lot like me, you choose to incorporate pesto into your meals at every opportunity. Aside from the typical combinations like pesto pasta and pesto pizza, I present to you a simple yet delicious pesto eggs recipe – a trend that, like most trends, rose to some popularity recently on TikTok.

Now, I won’t lie by saying TikTok food trends have never steered me wrong. I have been the victim of one too many failed mug cake recipes to know that all recipes should be taken with a grain of salt. So, let’s just say I was cautiously optimistic when taking food inspiration from the app.

After scrolling through seemingly endless videos of pesto eggs recipes, I settled on my own rendition of pesto eggs: over-medium eggs cooked in vegan basil pesto, served on ciabatta avocado toast topped with red pepper flakes. (Yes, I recognize the irony of using vegan pesto while eating eggs. Trader Joe’s Vegan Pesto just has a hold over me.)

While this is my personal preference for ingredients, feel free to try out different combinations, whether that be a sun-dried tomato pesto, a bagel base, or unique toppings like honey, bacon, or parmesan. Plus, pesto scrambled eggs or pesto egg omelets are also delicious variations with that same satisfying pesto flavor. Pesto Eggs on Avocado Toast

    Ingredients

  • 2 tablespoons pesto
  • 1 ripe avocado
  • Red pepper to taste
  • 1 ciabatta roll sliced and toasted
  • A splash fresh lemon juice
  • 2 eggs

    Slice and mash an avocado in a small bowl, and add a splash of lemon juice. Toast the ciabatta and top with the avocado.

    Heat a medium-sized pan on low heat. Add about two tablespoons of pesto and spread to coat the bottom of the pan.

    Once the pesto starts to sizzle, crack two eggs in the pan. Let the eggs cook for 2 minutes or until the whites of the eggs are mostly opaque. Flip both eggs in the pan and cook for another 3-4 minutes, depending on how firm you want the yolk.

While I might’ve been a bit hesitant to try out the pesto eggs TikTok trend, I was pleasantly surprised as the dish came together. The crunch of the ciabatta toast pairs nicely with the smooth avocado mash, and the burst of warmth and flavor from the pesto-smothered eggs makes for a perfect flavor combination. The lemon juice and red pepper add an extra little bite to the meal, making it an ideal breakfast to (maybe) convert you to a morning person.
