Spicy Mango Grilled Cheese

Ingredients:

½ mango sliced

4 oz brie cheese

4 oz cheddar cheese

Red pepper flakes (to taste)

2 slices of tuscan bread

½ jalapeño diced

Butter 

Directions:

1. Slice a half of a ripe mango into thin slices.

2. Dice and remove the seeds of half of a jalapeño.  

3. Cut the white rind off the circle of brie and remove half of the inside. 

4. Slice 4 oz of cheddar cheese into thin pieces.

5. Butter both sides of the bread.

6. Melt butter on medium high heat and cook one side of the bread for about four minutes, or until golden brown.

7. Flip the bread and on one slice, add brie, cheddar, jalapeño slices, and mango slices.

8. Sandwich together and cook until the bread is golden brown on both sides. Press down on the bread to get a crispy crust.

9. Sprinkle red pepper flakes to taste on the outside crust. 

10. Slice the grilled cheese and enjoy!

Fresh Mango Salsa

Ingredients:

1 mango diced (about 1 cup)

2 cucumbers diced (about 2 cups)

1 tbsp chili lime seasoning

1 jalapeño, deseeded and diced

1 red pepper, diced

Juice of ½ lime

About a ¼ cup of chopped cilantro

Salt and pepper to taste

Directions: 

1. Cube mango, cucumber, red pepper, and jalapeño into a large bowl.

2. Toss diced cucumber in chili lime seasoning. I like Trader Joe’s Chili Lime seasoning, but Tajín also works.) 

3. Add in other ingredients and toss with lime juice, salt and pepper.

4. Let the salsa sit in the fridge for about two hours, then enjoy!

Mango Crisp ​​á la Mode

Ingredients:

1 sliced mango

¼ cup quick oats

2 tbsp melted butter or coconut oil

1 tbsp of cinnamon

1 tbsp of pure maple syrup

1 scoop of vanilla ice cream 

Directions:

1. Preheat oven to 400 degrees Fahrenheit.

2. Melt butter (or coconut oil) in the microwave and mix in cinnamon and syrup. 

3. Mix oats in butter mixture until combined.

4. Butter two ramekins and fill with sliced mango. Top with a touch of cinnamon and pure maple syrup.

5. Add oat mixture to the top.

6. Bake on 400 degrees Fahrenheit for about six minutes and broil for about three minutes or until the crumble is golden and crispy.

7. Serve with a scoop of vanilla ice cream
